If you live anywhere near Plainview, Long Island and you cook, what you have, in essence, is a pantry roughly the size of the Rose Bowl! It's called the Fairway store and it's stocked with just about everything you need to make just about anything you can think of. That's what Douglas Gulija, Chef of the Plaza Cafe, discovered when he arrived to teach a Masterclass at the store at the end of June.

It was part of a series of classes sponsored by the people at Fairway to benefit the Long Island Chapter of the Cystic Fibrosis Foundation. They invite top chefs from the best restaurants on the island to create a menu and prepare it, live, in front of an audience. The guests then get to eat the food.
It's a great evening of dining and entertainment for anyone with an interest in food and all the proceeds go to benefit the CF Foundation. The audience gets to interact with the chef, learn about the restaurant and pick up a few pointers. There are even students from a local high school, studying for a career in the culinary arts, who are allowed to attend free of charge. And of course, everyone is exposed to the incredible variety of products available at Fairway. Chef Gulija, who toured the aisles, remarked in amazement, "They must carry 17 different kinds of polenta!"

In Early July. 2003, Hamptons Cottages and Gardens Magazine brought together seven of the East End's best known winemakers at a special dinner for an article on pairing wine with seafood. The venue was the Plaza Café. The dinner; scheduled for two hours, actually went on for about five with many lively discussions, lots of spectacular food and a good amount of the vintners' product being enjoyed in a wonderfully convivial atmosphere.
