Softspoken, urbane and sophisticated, the demeanor of Williams Selyem winemaker, Bob Cabral, belies his agragrian roots. Bob's family has been growing wine grapes in northern California for five generations and given that background, it's not surprising that he would know a thing or two about wine. On the other hand, the depth of his knowledge can be astonishing, and when you listen to him speak on the subject, you realize that such extensive knowledge can only come from a genuine passion for wine. You also realize that it is entirely appropriate that he's inherited the winemaking duties for one of the most highly respected labels in the U.S; Williams Selyem.
Ever since he started the wine dinner program at the Plaza Café, Chef Doug Gulija has wanted to do a Williams Selyem dinner. The opportunity did not present itself until early, in 2006 when Mr. Cabral agreed to host a dinner in Southampton. However, there was one condition. Chef Gulija would create the menu and Bob Cabral would pair the wines. This was not standard operating procedure for the chef but given his long-standing desire to work with the world-class winery, he quickly accepted. The Williams Selyem Wine Dinner became a reality and the food and wine worked together to produce one of our finest events to date. |
